This popular Mexican dish has such amazing flavors because the meat picks up plenty of spicy flavor from its marinade. They are easy to make at home, speedy and satisfying. This is one of my version of one of my favorite Mexican dishes to eat & to make. This is my twist on the traditional recipe. Its colors make it so appetizing! Plus, it's pretty healthy.
Ingredients:
1 lbs filet mignon
1/2 bottle beer
1 tablespoon fajita seasoning
1 teaspoon red pepper
1 teaspoon black pepper
1 teaspoon salt
1 teaspoon cumin
1 jalapeño
1/4 cup orange juice
1 onion
1 green bell pepper
1 red bell pepper
1 clove garlic
1/4 cup beer
1/2 tablespoon fajita seasoning
1/2 teaspoon salt
Directions:
Marinate meat with cumin, salt, red pepper, black pepper, fajita seasoning, orange juice, beer, & jalapeño. Leave for few hours or overnight.
In a pan or skillet, add olive oil. Add bell peppers and onions. Sauté for 5 minutes.
Add fajita seasoning and salt on veggies. Mix well.
Add garlic & mix in.
Add beer, bring to boil, then lower heat and sauté till veggies are wilted.
Grill meat to desired wellness. When finished, put on a cutting board and let it sit for 5 minutes. Slice meat and put on top of veggies. Serve with sour cream, salsa, corn, cilantro, tortillas, & lime.
