I've gotten so used to routine that I haven't cooked anything new lately. But I got bored and got cooking! So that means it's time for a new yummy recipe. One of my favorite salads is the Chinese Chicken Salad. Chinese Chicken Salad is not authentic Chinese cuisine, but a Western creation with Chinese flavor influences. I made a huge batch of this for lunch and dinner today and I can't stop eating it. It's so delicious! If you've had the Chinese Chicken Salad from California Pizza Kitchen, this is almost exactly the same!
Ingredients:
For Salad:
1 head of Purple Cabbage
1/2 cup chopped cilantro
1 head of Romaine Lettuce
2 carrots shredded
toasted sesame seeds
2-3 cooked cooked chicken breast
1 bunch of scallions, chopped
For Dressing:
4 1/2 Tbsp hoisin sauce
1 tsp Asian or Middle Eastern chili paste
3 Tbsp peanut butter
1 1/2 tsp grated ginger
1/2 Tbsp sesame oil
3 Tbsp brown sugar
1/4 cup water
Directions:
Season chicken with salt, red pepper, black pepper, & a little olive oil and grill.
In the meantime, chop the salad ingredients (cabbage, lettuce, scallions, cilantro) and combine all the ingredients in a large bowl.
Next, add all dressing ingredients into a food processor and process till blended well.
Dice the chicken and add to bowl of ingredients and add the dressing. Mix well.
Top with fried wontons and toasted sesame seeds.
