Oh the life of a foodie! When you love food, it's very difficult not to gain weight. I've personally put on a few pounds these last few months with the vacationing, holidays coming around, & everything in between. It's time to lighten things up a little so I look good in my little black dress for New Years! Here's a salad I could eat everyday! It's very light and easy to make, making healthy eating really simple!
Ingredients:
1/2 head iceberg lettuce, shredded
2 tomatoes, diced
1/2 jalapeno (more or less depending on your preference), finely diced
1/4 red onion, finely diced
1 lb lean ground beef
1 pack spicy taco seasoning
1 lemon, juiced
1/4 cup salsa of your choice (I use Pace Chunky Salsa)
1 cup frozen corn
extra virgin olive oil
Optional Toppings: favorite hot sauce, cilantro, sour cream, tortilla chips, etc.
Directions:
Prepare lettuce, tomatoes, jalapeños, & onions and place in a salad bowl.
In a pan, add a little olive oil and meat. Cook till browned & cooked through.
Add taco seasoning and about a 1/4 cup water. Mix well so that all the meat is evenly covered. Simmer for 3 to 5 minutes so that some water evaporates making a thick sauce.
Add 3/4 of the lemon juice and mix it in.
Add the salsa and mix it in. Let simmer for another 2 minutes and remove from heat.
In a separate pan, heat a tablespoon of olive oil and add in corn. When corn thaws, add remaining 1/4 of the lemon juice. Saute till corn is cooked. Remove from heat.
Mix the corn into the meat mixture so all the sauce covers the corn as well.
Put the meat & corn mixture on salad ingredients and toss. Top with favorite toppings and enjoy! (I just added hot sauce on mine!)
