My family cannot get enough of Mexican food. Our favorite is Fajitas. Its delicious and one of the fastest things cooked in our kitchen. When we don't have much time to cook or just simply want an easy weeknight dinner, we make Fajitas. This is a traditional Mexican dish that everyone knows. Fajitas are so colorful and full of flavor!
Fajitas were originally made with skirt steak. The name fajita refers to the cut, which was once considered a throwaway cut, given to cattle workers along with other unpopular cuts as part of their pay. It wasn't till the dish became popular that other meats such as chicken & shrimp began to be used. I shared my Steak Fajitas recipe before. Now, it's time for Chicken Fajitas with my twist.
Ingredients:
1 lbs boneless, skinless chicken breasts
1 pack Fajita seasoning
1/2 pack Hot Taco seasoning
1 jalapeño
1 onion
1 green bell pepper
1 red bell pepper
1 yellow bell pepper
1/4 cup tequila
1/4 cup orange juice
Directions:
In a pot, add olive oil and jalapeños and allow to heat.
Add in chicken and fry till browned and cooked.
Add bell peppers and onions. Sauté for 5 minutes.
Add fajita and taco seasonings on chicken and veggies. Mix well.
Add tequila. Mix well
Add orange juice and mix well. Cook till veggies wilt a little and liquid has thickened.
Remove from heat. Serve with sour cream, guacamole, salsa, corn, cilantro, tortillas, & lime.
