Summertime means bikini time... so, time to prep that summer body. That means healthy eating and time to lose those precious pounds gained during the winter, eating all the comfort food and all the desserts. I have a huge appetite and I love food. As a result, for me, that time has come... time to cut down on my carbs for a little while. And I mean little, because I have no will power to keep the clean, healthy eating going for long. I've been eating this salad everyday this last week and I can't get enough.
Arugula is my favorite salad green. I love arugula salads and I make them often. The peppery taste of the arugula with the freshness and sweetness of the tomatoes and the tartness of this vinaigrette make this salad oh-so-flavorful and simply delicious. It's light and amazing and perfect as a side for any meal or on its own as a main dish. This arugula salad takes less than 10 minutes to make. You'll be serving this at all your dinners.
Ingredients:
5 cups Arugula
1 cup baby heirloom tomatoes, cherry or grape tomatoes, halved
1 shallot, thinly sliced
1/8 cup orange juice
5 tablespoons balsamic vinegar
2 tablespoons extra virgin olive oil
1/2 teaspoon salt
1/4 teaspoon Aleppo pepper
1 teaspoon freshly ground black pepper
Directions:
Place arugula and shallots in a salad bowl.
In a small bowl, put orange juice, balsamic vinegar, olive oil, salt, Aleppo pepper, and black pepper. Whisk.
Pour the dressing on the arugula and toss.
Slice tomatoes and place on top of salad. Serve topped with Parmesan cheese.
