Yesterday, I really wanted cookies, chocolate chip cookies to be exact. I don't know if it was the fall weather or Halloween being around the corner. I decided to get in the kitchen and bake. It's not something I do often. I have to admit... I cook better than I bake... But I had to do it. When I get an urge, it has to be done. Well, I'm glad to say it was a success! Today, I am eating cookies. Follow your dreams. This recipe made me so happy! My favorite cookie is a white chocolate and Macadamia nut cookie. These cookies are sweet with hints of saltiness from the Macadamia nuts. They are just perfect!
Ingredients:
1 cup unsalted butter
1 cup sugar
1 cup brown sugar
2 eggs
1 teaspoon vanilla extract
3 cups flour
1 1/2 cups ground oatmeal
1/2 teaspoon salt
1 teaspoon baking powder
1 teaspoon baking soda
8 ounces white chocolate chips
1 cup salted roasted macadamia nuts
Directions:
Preheat oven to 375 degrees F.
In one bowl, cream together butter, sugar and brown sugar.
Add eggs and vanilla. Mix well to incorporate.
In a separate bowl, mix together flour, oatmeal, salt, baking powder, and baking soda.
Pour liquid ingredients into dry ingredients and mix well until dough is formed.
Add white chocolate chips and macadamia nuts and mix well.
Scoop golf ball sized pieces of the dough and place on a baking tray lined with parchment paper about 2 inches apart.
Bake for 6 minutes. Remove and let cool.
