So the other day, we were having pizza night at our house and I got a craving for some zucchini sticks on the side. I ran to the store and grabbed some zucchinis and made an amazing and healthy version of zucchini fries. They were crispy, crunchy, addictive and surprisingly easy to make! Once you set up your coating station, this recipe is as easy as one, two, three!
I love baking everything instead of frying because it’s so much healthier and honestly, tastes just as good if not better. The fried stuff is just full of grease! Baked Zucchini Fries are crispy on the outside and tender on the inside. A delicious way to cook with fresh zucchini! The most important part of a great-tasting baked fry is that it needs to be CRISPY. You all loved my Oven Baked Za'atar Fries and today your going to fall in love with these zucchini fries.
Ingredients:
3-4 large zucchini
2 tablespoons flour
1 1/2 cups Panko Bread Crumbs
2 eggs
2 tablespoons olive oil
1/2 teaspoon garlic powder
Aleppo pepper or red pepper powder or paprika
salt and pepper to taste
Directions:
Pre-heat oven to 425F. Line a baking sheet with parchment paper and lightly grease with oil. Set aside.
Place flour in a shallow plate and set aside.
Combine 2 eggs in a small shallow bowl and set aside.
Combine the breadcrumbs, garlic powder, salt, Aleppo pepper, and black pepper in another bowl and set aside.
Prepare zucchini by trimming the ends and cutting into 1/2 inch strips or slices.
Dip zucchini strips into flour, then egg mixture, then in the breadcrumb mixture and transfer to pre-greased baking sheet. Repeat until all the zucchini strips are coated with flour, egg, and breadcrumbs.
Drizzle with olive oil or generously spray with cooking spray.
Bake in the preheated oven, turning once, until golden and crisp, 30 to 35 minutes or until golden and crispy. Enjoy hot with Ranch dip/dressing, chipotle sauce, marinara sauce, ketchup or your favorite dipping sauce!
NOTES:
To Store... Place leftover zucchini fries in an airtight storage container in the refrigerator for up to 2 days.
To Reheat... For best results, rewarm the zucchini fries in the oven at 375 degrees F on a baking sheet coated with nonstick spray. Do not reheat fries in the microwave—the will be come mushy.
