Mandarin Orange Salad is a light and fresh salad that is exploding with flavor! Made with tender spring mix, bright orange mandarins peeking through the greens, walnuts, pecans, deep red dried cranberries, and a fresh Citrus Salad Dressing. This Mandarin Orange Salad is DELICIOUS! Plus it is incredibly easy to make, which is always a bonus for hosting guests or your busy nights! I got the inspiration for this salad from my favorite restaurant in Puerto Vallarta: SONORA GRILL PRIME! It is a must order when I'm there. It's a perfect mix of textures and flavors: fresh greens, sweetness from the mandarin oranges, crunch from the nuts, tartness from the dried cranberries. It all comes together in harmony in your every bite.
Ingredients:
3 cups spring mix
2 mandarins, peeled and pieced
1/4 cup dried cranberries
1/4 cup chopped walnuts
1/4 cup chopped pecans
Dressing
1/4 cup orange juice
4 tablespoons balsamic vinegar
1 tablespoon honey
1/4 tablespoon salt
1/4 tablespoon Aleppo pepper
1/4 tablespoon ground black pepper
1/4 cup good quality extra virgin olive oil
Directions:
Place spring mix, mandarins, walnuts, and pecans in a large salad bowl.
Place orange juice, balsamic vinegar, honey, salt, Aleppo pepper, ground black pepper, and olive oil in a bowl or mason jar. Whisk together to mix well.
Pour desired amount of dressing on salad mix, toss, and enjoy!
